Wine aging (l'élevage) corresponds to the period following fermentation during which the wine rests before being bottled. This step allows the wine to stabilize and develop its aromas. Aging can be carried out in stainless steel vats, concrete vats, or oak barrels, depending on the style sought by the winemaker. Stainless steel vats preserve freshness and fruity aromas, while barrels can bring more complex notes such as vanilla, spices, or oak. The duration of aging varies according to the wines: some are aged for a few months, while others can rest much longer. This phase is essential for the wine's balance and helps define its final character.
